Sweet Potato, Avocado & Zucchini Noodles

There are few things I love more than a tasty, easy to make meal!

At Target today I gathered a few things to make a healthy dish (so I wouldn’t be tempted to order pizza) as I knew I was going to be having quite the lazy day.  I love that Target has healthy grocery options- it is the best!!

What all did I get?

To start I added a tablespoon of evvo and added spinach in a pan, I included a couple shakes of red cayenne pepper, black pepper and a pinch of garlic.  I let this sauté for a few until the spinach shrank. 

Then I added in the sweet potatoes and let this marinate for a couple minutes.

Added in the zucchini noodles and let sit for a few more minutes.

Meanwhile, in a small blender I added the avocado, couple shakes of garlic, a teaspoon of evvo and 1/4 cup of water to make the sauce!

I plated it and Ta Da!  The final product (it was DEEEELISH)!!

I think when I make this again I will be sure to add in some some onions and maybe some parsnip!  Vegetables for the win- colorful, delicious & nutritious!!

Well Happy Whole

I have been a pretty avid blogging and social media fan for about as long as I can remember (well most of my adult life anyways).  I always have ideas about what I should create or what I should share- inevitably I start the blog, write for a couple of weeks and then stop for whatever reason.With the start of 2018 I am giving it the old college try (again).

So- here is how it is going to go… each month I am going to make a calendar for myself of things I want to do, books I want to read or podcasts I want to listen to.  I’ll talk about what is currently inspiring my choices, then it will be time to get started!

Throughout the month I will share recipes I am loving, experiences I’ve had and general life stuff.

At the end of the month there will be a wrap up- what worked, what didn’t and what I’m planning on changing in the next month.

I like flexibility, so this may change- but that in itself can be a beautiful thing.  My first monthly calendar and post will be out January 31st, in the meantime- checkout what I am up to on the daily via IG!
